This looks great, I'm going to give it a try. I'm the same way when it comes to Italian Sausage. I can't even eat it on Pizza. It's just too strong for my taste. Thanks for sharing sweetie.

This is an easy low carb meal with alternative meat choices. I used sweet Italian sausage. However, seasoned ground beef, pork or chicken would give this recipe a whole new taste. Stuffed Zucchini Boats 3-4 servings 6 zucchini 1 lb sweet Italian sausage 2-3 cups of spaghetti sauce 2 cups of mozzarella cheese 1 small onion chopped fine 1 tbsp minced garlic Cut zucchini lengthwise. Use a melon baller or spoon to scoop out the insides of each zucchini half. Chop zucchini pulp. Brown meat 1/2 way. Add onion, chopped zucchini , garlic to meat . Stir fry until meat is done. Fill scooped out zucchini with meat mixture. Top with tomato sauce and cheese.
