It has Hydrofoils. You can google it. It is basicly wings like an aeroplane but under the water. By bringing the hull out of the water the drag is significantly reduced and the boat is able to sail faster.

We usually use a safety net at the leeward bow to protect the men smashing on the sides, in high waves. What if the engines had to be running to keep the boat close, or if the chop was bigger? Btw the procedure used isn't described in any handbook!! and i would expect in such a multi-billion regatta the rescue teams to have at least basic training.

If you noticed, the hull raises out of the water as it accelerates because the winged foils lift it out of the water. When they rounded that gate and started to head more downwind, the force of the wind comes from behind rather than the side of the boat. This pushes the bow down. I'm no expert, but maybe lowering their foils and over-easing the sails around the mark could have prevented it...
Emirates Team New Zealand rounded the windward mark to starboard and dug the bows in to the main crossbeam in a violent maneuver. Two crew, Rob Waddell and Chris ward went overboard and were recovered by the team's chase boat apparently unharmed.
