Your animation is exactly what we do see if a plane is flying at low altitude. However most planes fly at a few thousand feet so do not reflect what your animation shows.

Air-Planes use a mechanical device called a GYROSCOPE!

Also if you actually observed a plane of course it would go over the horizon. That fact that you can see the plane for longer proves that the boat went over the horizon.

Perhaps show a real life example of what you claim instead of making something up to support your narrative.  I have NEVER seen a plane fly directly out to sea, let alone at a low enough altitude to make this observation work... neither have you.

a common.. wrong scale and yes we do! 1. the curvature is not as crazy. remeber we live on a huge planet. and 2. the plane flies at about 11'000m altitude so it takes way longer until the plane disappears. but yes of course we see that.. most of the time the airplane is so small that you dont see it but if there are contrails you clearly see it. just google contrails horizon !!

It would appear we view this because of the height (elevation) of the plane where as the boat follows (hugs) the curve.
The plane is flying high above the horizon, its vertical reference to sea level is not the same as the boat.
If it were to fly directly over the ocean, I believe this would have the same effect.
Why haven't you dont real life test like these with air ballons or traveling out to the salt flats or a nice telescope and ocean liners coming and going from ports? Hmmmmmm

They earth is simply a globe becuase I can see the curve in an airplane. And when I get up in the morning, I get a little dizzy so I can feel the spin. Eventually I get used to it. Case closed! FE debunked! Earth is globe because i say so.
