I really do not think you'll be disappointed. We make these pretty regularly and the only time I 'failed' was when I put too much sauce on. I like a lot of sauce, but you can keep some out for dipping if you want. That's good too! Good luck!

YES. I have made this with eggplant. You have to prepare the eggplant first though, with salt to make it sweat. =)

Easiest recipe ever for zucchini boats. This takes hardly no time at all to make FROM SCRATCH and they are so delicious. No chemicals, no preservatives, no gluten, no sugar! We try to stay gluten and sugar free as much as possible, but we do miss pizza. This is good enough for us to knock out the cravings! I am able to eat this on the Atkins diet, and my husband is able to eat this on a gluten free warrior diet. We are enjoying finding simple recipes and making them gluten free and sugar free. You can put any toppings you'd like on this. We can't find pepperoni here, so we just stuck with plain old cheese. Anything you like on pizza can go on these and taste great.
