If you guys are still interested in making the boats perform better, I would say try lowering the angle of the prop shaft. It looks like your boats are porpusing out of the water which happens when the propeller pushes the boat up, as well as forward until the propeller is out of the water and falls back down because there is no longer anything to push against.

Might suggest a brass or bronze prop. I've even seen stainless steel. You really have to be careful tho, the edges are razor sharp. If you've never seen a slashing from a prop consider yourself lucky.
