Boats don't go over any curve because the earth has no edge to go over. Your looking at the issue wrong. The earth is not a sphere or a flat shape, it is almost a sphere with some peaks and valleys and is wider at the equator then it is from pole to pole. What happens is that the earth is very very large, but when you get far enough from shore the arc between you and the shore becomes high enough that the shore appears to be below the water line. You are not going over anything, picture traveling along the surface of a balloon where the wider part is east to west and the narrower part is north to south. If the balloon was big enough it would appear to you on the surface that it is flat, however if you travel far enough, even with a set of binoculars or a telescope you wouldn't see the ground where you were standing because the part of the balloon between you and that point would from your vantage point be higher up then the ground you were standing on. You're not going over anything, you're placing more surface area and so more of the curvature between you and something else. Tall buildings are great for demonstrating this because if you take binoculars or a telescope etc and watch a building as you sail from shore, first the shoreline will disappear, then the door, then each floor one by one and all will seem to get swallowed up by the ocean. Nobody is dead, the building is still there, so is the ground, you just can't see it because at your distance the surface of the water blocks the view because it's an arc.

Here are two basic things that shut down the flat earth theory ... 01 ) traveling East or West is only possible on a globe ... 02 ) when traveling from North to South two sources at x distance apart from each other at the same latitude and along different lines of longitude will begin to see an increase in distance as they approach the equator ( this would be the same effect for both a globe model and a flat model ) however the two subjects will begin to get closer to each other again as they get further from the equator after crossing it = because the earth is not flat ... if it were then the distance between the two subjects would continue to increase - and that is not the case.
