Something I picked up from a Mono-vs-Cat discussion in another Vlog. Catamarans can sail faster, but the trade-off can be more stress on the mast, rigging and sails. One can, apparently, over-stress the sails causing them to fail sooner than one might expect. Also, the rigging could be over-stressed. The mono-hull tends to heel over and spill out the excess stressing air. I'm not a sailor, but thought those comments by a Cat owner were very interesting. Your research into this area might be of value.

NAUTICAL TRIVIA: To determine speed, early sailors dropped a line in the water with some sort of little drogue, I assume. Tied along the length of that that line were knots. Literally. I forget the distances between knots. Somehow, my memory wants to say the knots were 52 feet apart. I could be wrong, but Google it. (i'm too lazy) As the drogue hit the water they inverted an hourglass. When the sand ran out, they simply counted the knots that went over the side. And, that knot count was how fast they were going!
There's a ton of interesting nautical trivia. Many nautical words have worked there way into our everyday language. Some day I'll tell you about the origin of the word "posh".
BTW, as a fun job, I use to teach weekend sailing classes for a major university.

A couple pieces of advice if you are going to do any sailing on the open ocean (essentially in any area where you cannot safely swim to shore). Invest in a few EPIRB devices that each of you can carry in your pocket for rescue in case of fire/ship sinking. Here is an example from Amazon (non-affiliate link): http://amzn.to/29bFPvg
You also should consider investing in a good life raft (that autoinflates, contains an EPIRB, portable water desalination device and basic provisions) that you would store above board if you don't have one already.
Lastly if your boat has a man over board feature built into its GPS it is important to learn how to use it and to perform a drill so that you are prepared to rescue someone should this ever happen.
Sorry to be Debby Downer, but safety is very important on the open water, I lost a good friend on Lake Michigan (of all places) when their powerboat caught fire and their electrical systems were toast, no one had an EPIRB and the waters were very cold when this occurred. -
I was so WRONG....sailing is sooo safe even if you only sail around florida in 6 foot waves.
